Johnny Cake [Corn bread] With a twist.. Empty Johnny Cake [Corn bread] With a twist..

Do you like Johnny cake? I love it..

3/4 cup corn meal
I cup milk [Or butter milk]
1 cup all purpose flour
3 tsp baking powder
1/4 cup sugar
1 egg
1/3 cup oil
2 to 4 oz. blue berries

Preheat oven to 400 and lightly grease a 10"
cast iron fry pan [heat the pan in the oven 5/10 min]

Mix corn meal and milk in a small bowl so the cornmeal
can soak while you mix the rest of the ingredients

In a large bowl mix flours, baking powder, sugar and blueberries

Mix egg and oil together well and stir into cornmeal/milk
Add the cornmeal mix to the flour and stir till moistened

Pour into the heated pan and bake for 25 min. or till toothpick
comes out clean...

I have also made this with pecans instead of blueberries,
both ways are good.....Hope you like it !!

Have never made anything with corn meal! Interesting.
