Potato leek soup

3 or 4 potatoes cubed.
2 leeks - white and light green parts only - diced
1/2 Spanish onion - diced
About 1/2 carrot - also diced
Sometimes I chop up about 1/4 cup cabbage
Around 4-5 cups of chicken broth. I particularly like Horne's chicken soup base in water, as opposed to other broth - it seems to add SO much flavor.
Simmer till all is soft.

Puree - either with immersible puree device - or in blender.

You can add about a cup of white wine.
You can add some milk or cream.
Usually, I do neither.

That's it. It's ready.
