Egg Muffins Empty Egg Muffins

Saw this recipe on Facebook - and tried it. It was great - even husband who HATES change liked it!

It's sort of a baked omelette.

You use a muffin tin. Put in any of the stuff you like in an omelette - onion, pepper, ham, cheese - whatever. (I did a couple with feta cheese and spinach)

Then just scramble up some eggs - I just did a few at a time to figure out how many I would need. Pour on top of other ingredients in the muffin tin - and bake in a preheated oven at about 375 for about 25-30 minutes.

It would be a great way to feed a crowd for brunch - or even breakfast.

They can be reheated - and STILL taste good - I did it - and they were still tasty (in mike)
